Winches are a lot like welders, you don't have to pull all the cable out on a winch, and you don't have to turn a welder all the way up.
I carry 258 feet of ½" fiber core on my M-37, and there have been 2 times it wasn't enough.
As to steel -v- plastic, depends on the job. Line trucks carry plastic on the boom for the added electrical safety and stretch when the operator screws up. Plastic stretches, steel costs a lot of oney on rebuilding the boom. Deck winches are generally wound with fiber core steel for greater pulling strength.
There is a major drawback to plastic on a drum other than a limited pull hydraulic drive. If the drum has unlimited torque it can easily supply enough pressure to the bottom layers on the drum to turn them into a lump of plastic. That ain't fun to chop off!
If you want serious length and no corrosion factor look into nylon strapping.
