You might have poured some water down the exhaust pipe as you removed the heads. Running it up a steep hill a couple times will do a few things- pour the water out the back, blow the water out, and heat up the exhaust to cook out what is left.
I remember putting a brand new head on a customer's 318 in about '77. It had a flaw between water and exhaust port that you could stick a finger through. So I poured in about 7-8 gallons, before it started pouring out the exhaust pipe. Changed the head to a better one. and boy did it pump out the white smoke. Until I drove it 3-4 times up one of the steepest hills in town. One with the "trucks us low gears" signs.
