I've seen quite a few people younger than 40 running around in Challengers & Chargers (and Magnums and 300's too), especially the new Challenger. I'm 31 and I'd have a Challenger if I didn't have my Magnum already. The ones I see at our local Mopar club meets are probably at least 50/50 between 20-somethings and 40-somethings. Most of the 20-somethings are lower end versions with aftermarket wheels and extras, but it can be tough for someone that young to go after a 30K+ HEMI car.
As for restorations, I think the biggest hurdle is that you can't expect many 20-30 year olds to have the room and/or money to have an antique car and their daily driver. So most times you see them with older Mustang's and Camaro's, pickup trucks, etc. that can be had cheaply enough used, have good power stock, make decent daily drivers, and can be easily upgraded.
I tell anyone looking at buying an antique car to play with to get a "driver" their first time out. A big restoration can be a rewarding experience but a car you can drive and enjoy while you fix it up is more likely to keep a first-timer interested in the hobby and be less expensive (in support costs) than a restoration.
I'll fully admit I seem to be an anomoly, both in the vehicles I'm working on, and the interest I have in the hobby, but I'm far from alone in my interest in the hobby, I'm just lucky enough to have the time and money to support it.
