I don't think it will take that long to figure out. The trucks that will be restored then are the ones that are now plus those that were popular 20 years from now.
Restoration of our trucks and the old Ford and Chevy iron didn't just become popular, so the trucks people are looking to restore 20 years from now will I think have a following 60 years from now, just smaller.
I also think diesels will be the more common restoration choice, one because truck diesels are going through their "muscle car" era, with the Big Three trying to out-torque each other, and two because they will be the easiest to get fuel for. Bio-diesel will be available as long as we keep growing the plants that make the oil.
As for electronics and plastics, restoration will be tricky, and require skills that most don't have today, but manufacturing resources improve all the time. CNC machines were exceedingly rare and expensive 20 years ago, now you can buy one from Sears to carve wood at home.
Plus the people doing those restorations will be ones (like me) that have grown up with computers and aren't intimidated by them.
I think the bigger concern is that the culture has changed. Everything is disposable and modular. How many kids today will want to be bothered with restoring a 60 year old truck when vehicles are no more of a long term investment than a cell-phone is today.
