I know what you mean about galling, but a bit of lube like anti-seize, tap-magic (my favorite), or cutting oil solves the problem. I've only had trouble with galling when using SS sheet metal or thread-cutting screws.
I'm not saying stainless is the be-all end-all, but having fought with way too many rusted screws and bolts over the years, I use stainless whenever possible now. If it causes a long-term problem that's worse than normal rust, I might eventually regret it, but I doubt doubt that it will be worse. It's nice to be able to actually unscrew an old exhaust flange bolt without having to torch it off, or remove a water pump without the end of the bolt breaking off in the block. Obviously I wouldn't use SS for exhaust manifold bolts, head bolts, drive-line bolts or similar critical things, but for body fasteners, instruments, water pump and thermostat mounting, and other things that are low-stress but prone to rust, I'm using stainless.
As far as galling goes, I wonder how 316 compares to 18-8. I usually get 18-8 because it's the cheapest, but maybe 316 is better that way.
