There is "usually" a raised casting number on the side of the block that ends with 360 for the 360 engine. A sure way to tell without tearing the engine completely apart and measuring internals. Look at the ends of the oil pan where the 1/2 circle shape is. A 318 will have appx. the same size 1/2 circle shape at each end. A 360 has a noticeably larger 1/2 circle shape at the rear of the oil pan. When you see the two oil pans side by side it is quite easy to see. Many a 318/360 swap has been done without taking this into consideration only to find a humongus oil leak at the rear of the oil pan.
