It'll minimize the warpage caused by one side changing moisture content faster than the other.
Wood was white oak,, or yellow pine later?
Under bed parts were black, I think the straight bed strips were too. Angle strips
were painted with the sides.
That all said, I used poly spar varnish in semi-gloss, on red oak that I filled, top only, with tinted bondo. Spar varnish is made for exterior wood- softer, so won't crack, but will scratch easier. A good black can be made by adding black pigment to the spar varnish.
I bought a gallon and sprayed it. A quart or so would have done it. If you blow propane from an un-lit torch bottle into the can before closing it, you won't get any skin forming- I'm still using that gallon on miscellaneous projects a year and a half later.
