You can not hurt either the sender or dash gauge by hooking up the two wires backwards. If the gauge works, you have a full tank, and the gauge reads empty, then the wires are backwards.
The W-series shop manual has a VERY good section on how to diagnose and ajdust these gauges. If you do it on a bench, then you enclose the dash gauge in something like a coffee can or cardboard box to keep air currents from it. This makes it heat up and register quicker.
