The way you describe your truck, your in for some serious blasting. Cheap siphon type or even cheap pressure pot blasters are going to cause you problems. To blast quickly and with least pain possible, your going to need a large source (CFM/Pressure) of air. A compressor of this size is expensive, added to the cost of quality blast equipment.
I have a compressor that is up to the task, and also a quality 100 # pressure pot blaster. Due to the work, mess and cost of travel to buy Black Beauty, I find it cheaper to take my parts to a vendor. Lucky for me, I have a local business that restores tractors. They are set up with industrial blast equipment. In my opinion, blasting a complete truck is the worst job you can imagine. Add to that, if you dont have a source of DRY air, you will get continuous moisture problems in the media and plug ups. All my large parts are no done by the tractor restoration business. I do have a large blast cabinet that is used a lot. That is well worth the money.
With that said, after the steel is shiny, I treat it with Pickle-X 20, then PPG MP-170 epoxy primer and top coat with PPG MOA Hardened Chassis Black. The resulting finish is durable, long lasting, and really tough.
