Sure, no problem! If you leave the old fluid in there, the crud will settle to the bottom. When you drive it everyday, it's always getting mixed up, so it's not a big problem. But when it settles, you can get into trouble with it destrying your bearings and things once you start moving again.
The synthetic oil in the engine will minimize the dry start condition you'll have, even after only a few days.
Putting the vehicles on jack stands will prevent flat spots on your tires, and your springs will hang relaxed.
Most importantly though is the vermon proofing! Do what you can to keep mice out of it! Nothing nastier than that!
