The Dodge bell housing should work with all 6's and 318-360's, you may have to change the flywheel to match the starter.
My preference of course is a 318 Poly. Hemi power in a small package, you'd have to get a pretty stout 360 to match the Poly for performance and the Poly will still get better fuel economy (especially with the DTA Headers on it....)
