starting a motor thats been sitting......

Hey guys....just bought two project trucks that have been sitting for three years....supposedly ran good before they were parked. My question:what is the best way for me to go about getting them running? I know to change ALL fluids, but am wondering if I should remove valve covers and shoot anything down clyinders, flush out system, etc....just wondering what you all do with trucks of this scenario. Any input would be appreciated. Thanks in advance, John.
