The sky is basically your limit on power. It's very easy to get 500 horse power from a 360 with a single carb! More importantly, what are trying to accomplish? In a 4x4, its the torque that matters, not horse power.
I just finished rebuilding my 360 also in a 79, and this is what I did:
Edelbrock Performer intake
Edelbrock Performer 1406 carb with open air cleaner
a 204/214 cam, lifters, double roller chain
Flow Tech headers with a custom built free flow exhaust
MP electronic ignition
reworked, but stock sized heads
stock short block
I maintained all of my emission equipment (because I have too), the truck now runs better then before, passed emission test easily, gets much better milage, and my 0-40mph time was easily cut in half!
Do what you want with your motor, but I'd suggest working at getting your power range down low, in the off-idle to 3000 rpm range. A high-revving, high horse power engine will do no good in your heavy truck.
