Hi Will,
I have a workbench in the wood shop that I built at 40". Most of the time I find it uncomfortable to work at, as you also have to figure in the height of the object you are working on. 40" is fine if you are writing on a clipboard, but if you haul a transmission up there and then try to reach down inside you will be stretching it. The bench in the garage is at 36" and I find it quite comfortable. I built it out of 2x12 lumber and had a local metal fab shop bend up a piece of 1/8" steel to wrap the top and all the edges as well as going up the wall about 8" as a backsplash. It is very sturdy, easy to keep clean and has worked out very well.
