Roger,
If you end up using hickory, please let us know how it works. I have white oak boards air dried (3 years in the garage) and ready to plane and rabbet when I am ready to use it next year.
I have heard that hickory has a tendency to twist and warp when cut in boards. If true, that could be a problem for your project.
