The rule of thumb with green lumber is 1 year of air drying for every inch of thickness.
This is how I am doing the bed in the civi power wagon. I got "green" white oak from the sawmill a few years ago and have it in my garage, stacked up with "stickers".
For this reason, you may want to use kiln dried oak, then you can use it immediatiely and swelling should not be an issue.
