If you want to get up to date info on trail conditions in Québec, you can visit the following link.
You best bet for a one day outing or a one nighter seem to be the Mont-Tremblant a few hours North of Montréal.
Otherwise, you can go into the Gaspé peninsula. If you've never been, when conditions are good (which is most of the time), the views are wonderful. Though I don't think you can snowmobile in the park where the Mont-Albert is, you can find there the only herd of caribou south of the St-Lawrence seaway.
