Grade 8 bolts are the strongest bolts measured in tensile, which is a force that tries to pulls in the direction of the bolt. Grade 5 bolts are the strongest in shear. Depending on what you are trying to do, grade 5 are usually better. I used all grade 5 when I put my bumper/winch assembly back together because most of the bolts are in shear. I dont think either of them has any inherent corrosion resistance, they probably both come with any cotaing you need. Many people go overboard with grade 8 bolts just to say that they did it. More often than not, grade 5 is better.
