For the most part the "bread van" motors that have documentation are going to be fairly good motors. Fleet trucks normally get routine service and regular maintenance. The down side is that they may have several drivers who have different driving habits and some drivers may have a bone to pick with the company so they'll run the cra# out of them.
Bruce has it right, pull the pan, 90% of potential troubles will be found there.
It's just like buying any used vehicle, some are cream puffs and some are....
