Bring it to a boil, start stirring, and went it starts to get stringy when dripping off a fork start whipping it, it will crystalize real soon. Also right when it's stringy you can pour it over ice cream and it will crystalize into a taffy like stuff. This is for candy, I don't know how he makes the granulated sugar.
