Yes, correct on operation of the controls.
For serious winching, I would bring the R's up to 1400. Simple, non serious, idle is fine. I winched the Bumblebee (shaft drive) up the bank alongside the shop for a comparison test. Then I backed the Carryall down off the bank. At Idle she came up, no snorting at all. As close As I could tell without measureing equipment, power on both is the same. Remember with hydraulics; FLOW GPM = Speed. Pressure PSI = Power.
