They are not thinner that straight 30, they just don't get thicker when cold. That allows them to more easily get pumped throughout the engine on start-up.
ALL oils get thin as water at about 280 deg. That is about running oil temp- the internal friction will heat the oil much hotter than the thermostat setting.
SOoo, stay away from heavy, straight weight oils, like 40 or 50. Otherwise, not much advantage. Can't hardly find straight 30, so 10-30 erso ought to do. YMMV, mine does.
