Since you are going to V8 anyway, just put in an overdrive, 4.89 gears, disc brakes all around, a pair of Dan's ARB lockers and a set of stronger axle shafts. Then add in a PS box and dual master cylinder with power brake booster like Paul in NY did
Then you will have a very stout setup that will run highway speeds, and all the engeneering is done already for you.
Otherwise I would go with a set of Dana 70s from a 60s W300, from what I hear the spindle will allow the mounting of PW hubs, allowing the stock look from the outside.
Another, more modern option is a set of Dana 60s from a pre 93 Dodge 1 ton single wheel, that is a strong setup, and most come as 4.10 and 3.?? so they should allow higher road speeds.
I think the 2 1/2 ton axles will be a TON more work, and overkill for the strength of the frame, etc of the truck.
The CUCV axles sound like they would need a new gearset anyway, so why not buy a set of axles with a better gear ratio up front.
Just some random thoughts, obviously it is your project, and you should create whatever you think would be the most fun.
