I am not in the brake business anymore, so I take them to one of my old employers who lets me use his brake lathe. Brake lathes use adapters that ride on the bearing races to simulate the true center. i always arc the shoes to fit the drums after machining. Local relining/friction service shops can do that for you for cheap. bring them all your drums and shoes and they can machine them and arc/grind each shoe to fit precisely to each drum. this was standard practice back int the 4 wheel drum days. It makes an incredible difference in brake performance. and makes the adjustment easier too.
