If a carb on a street machine floods in cornering, it will be even more prone to flooding off road where the bumps, off-camber slopes and hills would magnify those results. Off road machines really need fuel injection, but the Edlebrock Off-Road Series carbs are a noticeable improvement over a stock 4 bbl. I had so many problems with the Carter in my CJ-7 that I put a Weber on it,..it STILL stumbles and floods during rock crawling and off camber slopes. Fuel injection is the ultimate solution for a true off-road motor, but conventional carbs can be modified to not suck as bad, which is what the Off-Road Series Edlebrock is all about. If you are simply trail riding you won't notice the poor performance of a conventional carb, so it all depends upon how you use your truck.
And...your Poly probably DID have more power than a 390 ferd, or a 350 gm...(that will get things started...ha!ha!)
