Turning Hubs

Hey all....
I vaguely remember reading somewhere that extra care needs to be taken when having your hubs turned, but i can't remember exactly what it was. Anyway, I'm gonna do them soon, and I don't want to be on here looking for hubs to buy.

Oh, and there's one sunofab*%chin' hub that won't come off, i've got all three screws out....any ideas?
