Your truck should have a 'solid state' regulator with a three pin plug..if so you are experiencing a poor ground or a poor connection either at the dual field alternator or the actual regulator plug. It is possible that at some point the solid state regulator was replaced by a mechanical one, (The solid state one is a thin flat device that is sealed, the mechanical type is a rectangular device and sometimes has an 'adjustment' screw for the cut-out voltage) and if so, what you are seeing on the ammeter is the cut out relay cycling the fields of the alternator, this is quite normal and seems to be most prevailent on Mopars!
