I grew up on Long Island as a child in a mostly Polish and Swedish family and I think a little Jewish (Tom Jacobs)or maybe it once was(Jacobson). Anyways we did shell fishing and also any fishing and animal farmimg that we were able to do back then. It included chickens,ducks, geese and turkeys. We dug clams, bay scallops and blue claw crabs. We caught blow fish, flounder and eels, along with stripped bass from the bay. Almost all of these things we would freeze or smoke out back in the smoke house.
I moved to Arkansas in 78 after the service and married my born and rasied Arkansan wife. She and her family have cured and smoked thier own meats, and here in the Ozarks are some of the best smoking woods. We always loved Hickory and Apple and then one day I had cut some fire wood and smelt it burnning so, we had to try out, it was Walnut. Now we use walnut when ever I can find a old walnut to fall.
