GM Temp Sender Question

I have an 83 GMC K3500 with a 350 in it. Does anyone know how to test the temp sending unit or the gage itself? It acts like it's heating up about 220° if I pull over shut it off and re start it the temp drops. It's a new sending unit.Should I not have used teflon tape on the threads? Is there a way to check the sending unit for voltage or resistance? I'm thinking it might have grounding issue's. I've changed everything in the cooling system and added a 4 core radiator to keep it cool while traveling with he plow.
