I think small SS "aircraft cable" would work okay on some of the lightweight low-power electric winches where the diameter of the cable (1/4" or so) is much smaller relative to the drum diameter than is a 7/16 cable on an MU-2. Corrosion resistance would also be more important with such small cable, where any signficant rust would really eat into its strength.
I'm not aware of any industrial cable-operated machinery (other than aircraft) that uses SS cable, even underground in mines or in wet pits, so ordinary galvanized steel must be completely adequate for long life on the job.
