It could be a number of things that can cause this.
What octane fuel are you running? A lower octane fuel could be causing this. I wouldnt run anything lower then 91 octane in a 360.
Also your timing could be advanced rather far and causing some heat build up that is also igniting fuel after you shut off. You might try and retard the timing a bit by turning your distributor counterclock wise a little bit. You really need to put a timing light on it to get it correct.
