I run 32x11.50 tires on 6.5" rims offroad. The 6.5" rim is 2 or 3 inches narrower than recommended for that size tire. It makes it harder to loose a bead when running low pressure. The buldging sidewalls protect the wheels a bit. The sidewalls themselves are vulnerable, but that is more a product of airing down. I probably wouldn't run this combination on the street very much, but I wouldn't be afraid to run a tire oversized by just one inch.
