Color coding is a good idea so that if you have a problem down the road, you don't have all red or blue wires with no idea of which is which.
On gauges, I generally use 12-14 gauge wire for everything but the clearance lamps. One big exception is the charging wires to the generator/alternator. You want at LEAST 10 gauge on these as they carry the most current after the battery to starter cable.
On the starter, I would change to a later starter if the teeth will match. On some of the older Mopar starters, the lever that engages the current also engages the starter gear. If you jamb it on, you'll probably eat up either the starter, the flywheel, or both in short order.
On gauges, you can get small voltage reducers for single gauges like the fuel gauge or big ones for 6 volt accessories. I know J.C. Whitney has them in their catalog and you may be able to find some at their web site. 12 volt will fry a 6 volt gauge almost immediately. Fortunately, most of the gauges are mechanical like the oil and water gauges.
