{{Your gasoline will go bad. Draining the tank is a good idea, but then you are more likely to get serious condensation in the tank. Interested on other ideas with regard to the fuel tank.}}
I've always had good luck with using a fuel stabilizer like Sta-Bil. I've not ever had one sit for three years though. 1 year was the maximum.
Mice and other rodents can really tear a vehicle up. Stuff a wad of steel wool into the tailpipe to keep the little cheese thieves out. If you forget to remove it, the motor will still run, albeit poorly. I always used moth balls to keep mice out of vehicles although it can really stink after awhile. I heard recently, and am trying it now, that Bounce Fabric softener sheets will run them out. I put some in a car when i was moving it and a mouse jumped onto my leg. I like to kicked the daylights out of the dashboard. I'm not afraid of mice but when they jump on me, if I'd have had a gun I'd have shot the neighborhood up and probably missed. I haven't seen any since I put about 4 sheets in the car.
