I agree with Joe. I have never been able to get a good edge on a knife, much to the dismay of my father the master meatcutter of 35 years. I finally bought a lansky system and I love it. I can get a beautiful edge on anything, and it is relatively quick. Dad even thinks it is pretty nice, although he is still using his steels and rods.
