12 volts from a 24 volt system

Most 24 volt systems use (2) 12 volt batteries in series. Is there any reason why you can not connect 12 volt accessories, such as radio, electric winch etc to just one battery so your at 12 volts. Even during running/charging one 12 volt battery in series still is at 12 volts.

Am I missing something here like an unbalance between batteries for charging ?
