I've heard all the leaching rumors about acid dipping but I've restored lots of cars before using ready-strip...I've never ever had a leaching problem but it's very important to have your parts phosphated after they come out of the acid tank.
I think it depends like anything else on who does the job for you & the quality of work they do.
Acid dipping still has negatives, some being that it is very hard to get any paint in many areas once a car has been dipped, many hours will need to be spent re-seam sealing the entire car/truck & It's also fairly expensive...around $2000 for a complete vehicle with phosphating.
I believe when they phosphate, the parts get baked which dries any acid remaining in any nooks & crannies.
I've had excellent success anyways, but to each his own!
