If your 318 heads don't have hardened seats (say pre '72), I'd get some '302s to start with instead. If you have to put in hardened exhaust seats, new guides, new valves, springs, etc, you'll be much better off starting with a better head that at least doesn't need the seats replaced.
There are some good deals on complete heads you might want to look into.
Mopar Performance also sells bare and assembled heads for pretty resonable dollars, depending on what you're buying.
