Summit Racing catalog is a typical source (1-800-230-3030). $240 for a universal, pre-made harness (part #PRF 10102).
However, it's not that hard to build from scratch. Once you locate a wiring diagram, it will have wire colors and sizes on it (except military wiring, which was pretty much all one size and color with numbered tags on it).
Even a wiring diagram for a similar vintage Dodge truck would do if you're converting to civilian electrics.
Just buy rolls of wire, or buy it off bulk rolls from an old-fashioned hardware store. I did mine from scratch. I just laid in one circuit at a time and then wrapped it after everything was hooked up and tested.
