I think you are really asking several, separate questions.

Addressing only one of them, I think you would find the 251 more than adequate to do the things you mention, and have it be a very happy experience, knowing the machine as it originally was configured I have done all that with a 230 in a 1948, and with great success.

For anyone thinking about this, I am not opposed to engine conversions, either. I just like the music that an original truck makes as it hums along....
