Just looked through an old book I have here and it says the thing that will ruin the edge when grinding is too much heat. They suggest using a low rpm grinder and enough water to keep it good and cool. They even show using an oilstone with water and rubbing by hand, but I'm sure this would be very tedious. When I was a kid we used to make drinking glasses from old beer bottles (more for the novelty than necessity). We would cut the necks off then set down with wet sandpaper and smooth off the cut. I remember it took a long time to do this by hand, but it can be done if your determined.
