Just my opinion, but I consider ether to be a "field expedient" and a sign of an engine that needs work. It's okay to use when you have to, but if you have to use it continuously something's wrong. If the engine knocks, you're using too much. I did have one little diesel genset engine that I partly rebuilt that needed ether for starting the first 10 times or so after the rebuilt, but once the rings seated it it doesn't need it anymore.

On diesel engines, WD-40 is a safer starting fluid, much easier on the engine than ether but still gets the job done. It's one of the few things WD-40 is good for in my opinion. Never tried it in a gas engine.
