You may want to look in to soda blasting your sheet metal. The unit works along the same lines as a sand blaster, but uses #5 "baking soda" or sodium bicarb. It removes the paint only and leaves the mill finish. I blasted my W-200 cab & bed and you just hose the soda dust off when done.
It does NOT remove rust though.
