I have been considering your problem (and limiting my thoughts entirely to the fuel system) until Cheyenne Dave jogged my memory in his post above and below. It very well could be the condensor. I have had two go bad over the past two years. I would have to drive it to be sure, but your description does loosely describe the symptoms my '51 was having during its last faulty condensor episode. This would be a cheap part to replace and try. I went through the entire fuel system and electrical system on my '51 before finding the condensor was the problem. The previous condensor problem caused the truck to stop completely, dead in the water, as if someone turned the key off.

Back to the carburetor. I could see these symptoms taking place if your main spring in the governor had broken but the secondary spring was still good.
