It's not out from the south side, but you could take Il. Rt. 38 (Roosevelt Rd.) west out of Chicago. This will put you out west of DeKalb. Possibly Freeport if I remember right. From there just run different State and County roads in a west/southwesterly direction towards Genesceo (? not sure of the spelling). That should put you near the river (the Mississippi). Lots of open farm country west/southwest of DeKalb. Coming out of Chicago will be the hard part. Coming from the south side it's wall to wall cities out to somewhere near Joliet, and the west side isn't much better, it's wall to wall cities till you get to the Fox River, the Geneva/St. Charles area.
