The two inch thick (or so) spacer between the block and the bellhousing is the bellhousing adapter. They are available from Cummins with rear faces that match GM/Chevy, Ford, Dodge, and SAE bellhousings.

Spicer five speed would not be my first choice of transmissions in a flatfender, but if you use one you would have to change the bellhousing adapter, and all the parts from the flywheel back.

NV4500 would work, but you have to swap bellhusing adapter to the wide pattern one, Cummins only makes this part for the Dodge NV4500... Would have to swap out the clutch as well in order to get the right spline/diameter to match the input shaft.

ZF S6-650 would mate using a Ford adapter and matching clutch...

You could use an Advance Adapters Ranger OD betweeen the Chevy bellhousing and clutch that you have and use your existing transmission (Chevy or Ford patterns off the shelf from Advance-can make it fit to a NP420 with some work).

Will need to trim the oil pan two inches and add two inches of steel block between spings and axle. May need to add one extra full length leaf to your spring pack.

Cummins is a 251 cu in, so your cooling is just fine with stock radiator, suggest electric fan instead of mechanical setup.
