It goes back to a protein - starvation problem, "Kwasioker", I think. Anyhow, if southern poor folks ate a lot of corn that hadn't been treated with lime to release the protein, you get protein starved. Symptoms were a "sunburned" neck and a lower than mormal (even for the area!) I.Q. Most corn chips and grits today will claim lime as an ingredient.
So, calling a white guy a redneck should be no more politicaly correct than calling somebody thats disabled a gimp, or a slow child a retard,or an epileptic a spaz.
