I run 11.00-16 Michelins on the 16x6.5 six hole "split ring" wheels on my 1968 W300. Since the 4.88 axle gears cause me to run slower than surrounding traffic, I never bothered to get the speedo recalibrated to account for the 5% increase in ground speed. I'm still the slowest truck on the Interstates; passing anything on the flat or uphill is cause for major celebration. Around town I just keep up, or in school zones down with, other traffic. Haven't got a ticket yet in my big, fat profile bruiser.
I don't know of any 16 inch tire larger than an 11.00-16 that would fit your wheel. Wheel well clearance on my truck is no problem. But moving and lifting a mounted 11.00-16 tire is a heavy undertaking, so I would not look for anything larger.
