Well, you need to consider what horse power the 265 generates. If it's out of a car between 1952 and 1954, it produces about 119 in horse power. You have a little more torque over the 230, so that will help in pulling. Unless you've done some internal engine tweeking, i.e. larger valves, porting, cam, and shaved head, adding aditional carbs only may not give you the boost you'd like. You'll need to decide if you want MPG or Power and since you'll be pulling a trailer with horses/gear, and trailer face pushing against wind, and terrane, hills and what not, depending how often you'll do it, power might be the choice. You don't need to worry off-roading in low gears, you'll hardly notice any difference between 5.30's and 4.89's, I have a set of 4.89's in my truck with 38 tires. If your running 36 inch tires, then 4.89 is probably your best choice for mileage and pulling the trailer periodically. Going to 4.30's, you find that it would be to high for pulling the trailer. My 230 worked pretty good with no load on flat ground at half throttle at 60 mph and the tires are mounted on combat rims heavier than the stock PW rim, pulling a trailer with horses I think, would be a little impractical. If it were me, I would go with 4.89's and see how the combination of engine/gearing works for milage and pulling the trailer, you can always go to the 4.30 set later. At the link is a chart that can help make your decision. It was developed for jeeps, keep in mind, your truck is heavier, but it's a good guide to start with.
