I replaced one recently on a 251 and I used spray on Copper Coat. Seemed to work fine for me.
I purchased it from a local auto parts store. It's a Mom and Pop place not a chain store. He seems to be able to get most anything I need as far as drive train stuff for my trucks within one day. Personally if I'm going to the trouble to replace the head gasget I would not consider using a used one.
